Special sauces
Sugo all'Amatriciana
200 g n.w. glass jar
Sauce with a base of onion and smoked bacon.
Excellent sauce for spaghetti, bigoli and bucatini (long pasta in general).
Boil and if necessary add a ladle of stock and a generous sprinkling of grated pecorino cheese.

(for 6 people): 500 g tgarliclini 1 jar of Sugo all'Amatriciana 5 g chilli oil 6 cheese baskets
Boil the sauce well adding the stock; flavour with the spicy oil. Toss the tagliolini in the sauce and serve in the cheese baskets. For the basket: cover a small non-stick pan with freshly grated parmesan and heat up. Before it goes brown, place it on top of an upturned bowl, cool and use as a basket.
